Kölsch is a beer style originating in Köln (Cologne in English) in Germany. In Germany you can’t call it Kölsch unless its brewed by one of the 11 official Kölsch breweries from Cologne. It’s has a lager-like grist but fermented with ale yeast. For many homebrewers it’s the “lager” they will brew, as the ale yeast it uses doesn’t need lengthy cold fermentations. Our Kölsch is very traditional – using German malt and a restrained amount of German hops. Our name refers to the Stange glasses in which Kölsch is served and Zauberland is the land of magic (maybe where all your beer dreams come true).
