MOUNTAIN Red Gum Single Malt is created using 100% malted barley, of which 50% is heavily peated.  Defying tradition, it is matured using MOUNTAIN's proprietary maturation technology and  allows us to circumvent the need for traditional barrels.  Instead, we are able to use native Australian Red Gum as the sole wood  expression, resulting in a uniquely Australian nose reminiscent of Australian campfires and classic peat.  This in turn opens up to a malty sweetness hinting at dark fruits and chocolate that is brightened by a hint of citrus.
