This Jamaica Rum was allowed to mature for a full 17 years in the tropics. Due to this very long maturation period, 71% Angels Share is recorded but also an incredible density of fruit and ester notes that are very well integrated and this distillate has the highest possible balance at a full 66.3% ABV offers. The fermentation (similar to the sour mash process in the USA) lasted a full 20 days; an ester content of 585g/hlap and 1777g/hlap of volatile substances were measured. The color is undyed and therefore natural - this Jamaica rum is also distilled on 100% pot stills.
